
Join me on my journey into the world of vegan and vegetarian cuisine! I'm excited to share a variety of delicious vegetarian and vegan meals and recipes, including desserts, from my kitchen and possibly when I travel. I've been on and off a vegetarian/vegan journey since 1998, and in mid 2023, I embraced a predominantly vegan lifestyle, with fish being an occasional indulgence. I understand that my current physical form is temporary, and I am committed to doing everything within my power, with the guidance of Divine Intelligence, to support and heal myself, striving to avoid daily ailments for as long as I live. Even so, I know this does not guarantee permanence on Earth; it is about striving to maintain optimal health during my time here. This is my personal journey. It's baby steps and not an easy journey because of how we've been programmed to eat. There is work, time, and discipline involved. And certain foods may not be readily available in some areas. On my diet, I try to ensure that I am getting the proper amount of vitamins, nutrients and protein for my body; there is research involved and maybe a consultation with healthcare providers. And while I don't aim to persuade anyone else to follow my path, my hope is that these dishes will inspire you to try something different. Oneida L. Gilbert
