VEGAN LOADED POTATO SALAD

Potato salad has always been a favorite of mine, both as a side dish and a standalone meal. This particular potato salad is perfectly seasoned and enriched with vibrant vegetables, offering a visually appealing and flavorful experience. In my opinion, it is exceptionally delicious. This potato salad will pair well with my coconut and cereal-crusted swai.

Vegan Loaded Potato Salad

What You Will Need:

  • Red Potatoes 3 Medium Sized

  • Green Onions or Red Onions 1 Cup (finely chopped)

  • Rainbow Baby Carrots 1/2 Cup (finely chopped)

  • Celery 3 Tablespoons (finely chopped)

  • Yellow Bell Pepper 2 Tablespoons (finely chopped)

  • Sweet Gherkins (finely chopped) or Sweet Relish 3 Tablespoons

  • Minced Garlic 1 to 1 1/2 Teaspoons

  • Chopped Chives 1 Teaspoon

  • Vegan Mayonnaise 3 to 4 Tablespoons

  • Dijon Mustard 1/2 Tablespoon

  • Organic White Pepper 1/4 Teaspoon

  • Kosher Sea Salt 1/2 Teaspoon

  • Shredded Vegan Cheddar 1/2 Tablespoon (white or yellow for garnish)

  • Dried Celery Flakes 1/4 Teaspoon (garnish)

  • Smoked Paprika A Pinch (optional)


How To Prepare It:

1. Wash the potatoes and dice them into bite-size pieces (enough for 3 cups)

2. Boil the potatoes with 1/2 teaspoon salt until tender. Pour the cooked potatoes into a sieve or colander and rinse them with cool water. Leave them in the colander to allow them to drain and cool down a bit. Then add the cooked potatoes to a large bowl.

3. Add the chopped onions, celery, carrots, and bell peppers to the bowl with the cooked potatoes. Combine the potatoes and vegetables well.

4. Add the relish, minced garlic, chopped chives, mayonnaise, dijon mustard, and white pepper to the bowl with the potatoes and chopped vegetables. A pinch of salt is optional. Combine the ingredients well.

5. Add the potato salad to a serving dish. Garnish with vegan shredded cheddar, dried celery flakes, and smoked paprika. If you prefer, you can refrigerate the potato salad for about 20 minutes before adding it to your serving dish.


Storage: The potato salad can be stored in a refrigerator in an airtight container for 3 or 4 days.
