BLUEBERRY PECAN LOAF

I baked a delicious blueberry pecan loaf. I toasted two slices in the oven and added blueberry syrup on the side. Homemade bread serves as a healthier alternative to processed options, which often contain extra ingredients and preservatives. Homemade bread allows me to control both the ingredients and the preparation process. This bread isn't just for breakfast; it can be enjoyed at any time—whether as part of a sandwich or simply on its own. The loaf can be baked with or without the addition of blueberries and pecans. This flavorful loaf would make a wonderful gift for anyone who appreciates breads and pastries.

Homemade Blueberry Pecan Loaf

What You Will Need:

  • 9 x 5 Loaf Pan

  • Self Rising Flour 3 Cups (sifted)

  • Non-Dairy Vanilla (non-Greek) Yogurt 1 1/2 Cups

  • Almond Milk 1/4 Cup

  • Fresh Blueberries 1/2 Cup

  • Chopped Pecans 1/4 Cup 


How To Prepare The Bread:

1. Line the loaf pan with parchment paper. Line the long side of the pan first, leaving enough parchment paper hanging over the edge to pull the baked loaf out. Then line the short side of the pan with parchment paper.

2. Position the oven rack in the center of the oven. Preheat the oven to 375 degrees F.

3. In a large bowl, mix together the flour, yogurt, and milk, making sure the ingredients are well combined. Then fold in the pecans and blueberries.

4. Add the dough to the prepared loaf pan and smooth it out with a silicone spatula. Place the pan into the preheated oven for 45 to 50 minutes. Watch the bread carefully because oven times and temperatures can vary.

5. Remove the pan from the oven. Carefully lift the loaf from the pan using the overhanging parchment paper as handles. Place the loaf on a heat safe cutting board and cover it with a clean flour sack kitchen towel. 

6. Allow the bread to cool before slicing. Carefully slice the loaf using a sharp serrated knife.


Storage: The baked bread can be stored in a bread box or paper bag in the fridge for a maximum of 1 week. Or the bread can be frozen for up to 2 months. To help prevent freezer burn, wrap the bread tightly in plastic wrap, and store in a container that is suitable for freezing.
